I don’t know if you have checked out our weight loss blog The Chubby Girls Diary yet, But you should! Last week my brilliant sister (you should check out her blog too) wrote an article about fresh raspberries. It was so well written I wanted to share it with you here too. I also couldn’t wait to share the pictures of my Lemon Raspberry Yogurt Pops on here. I have really enjoyed playing around with food photography. So here is the write up my sister did for our blog. When I was a kid we used to visit my Grandma Udy in Salt Lake a lot. My Aunt Jerrie lived in the house next door. Jerrie had a raspberry thicket running along the east side of her house. I spent many summers picking raspberries and eating them from the vine with out a thought to washing them.  I’d come back inside, my stomach a little sick and my fingers stained red. No one ever got after me or any of the other cousins. Jerrie was such an amazing woman and loved all of us so much. She’s been gone a while now and I miss her a lot.  She was an amazing cook and I learned how to cook for an army from her. James always makes fun of me because I don’t know how to cook for three people, but three hundred, no big deal. My amazing cousin Darci Nash inherited her amazing ability to make chocolate fudge cake (she does amazing wedding cakes by the way if you’re in need of one!)

While at my mom’s house for the Pioneer Day Weekend with the whole family, my mom told Bridget and Paige she had raspberries that needed to be picked. Tonya and I promptly pushed them out of the way and flew out to pick them (raspberries before motherhood, seriously).  As the girls pushed their way in and helped pick the berries, I caught them sneaking a few, just like Tonya and I used to do at Jerrie’s house, completely oblivious to the fact they needed to be washed. It made me miss Jerrie but warmed my heart to know the tradition of picking raspberries has been passed on to another generation of little girls.

We decided to try Lemon Raspberry Yogurt Pops and you should be glad we did. Cool, tangy, creamy and sweet, these little beauties will satisfy your summer cold/sweet cravings with out the fat of ice cream.

A few things about them – we used Greek Yogurt (my favorite, versatile staple) in this recipe. Normally, I advocate buying fat free yogurt because in most recipes you can’t tell the difference. However, for these I recommend the full fat kind…..wait! Don’t leave! Trust me, we tested both kinds of yogurt – full fat and fat free and decided the full fat had a creamier texture and didn’t leave a weird aftertaste.

Consider this though, a serving of Greek Yogurt is eight ounces (a full cup) and although it has about eight grams of fat, these ice pops were only two ounce servings, so you’re still getting less than two grams of fat. Not bad for a dessert. Each one of these puppies only have 100 calories, and they will definitely satisfy your sweet tooth. Enjoy!
